Berry Bliss Mini Galettes

- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 2 tablespoons sugar, divided
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1 sheet of pre-made pie or puff pastry (thawed)
- 1 egg (for egg wash)
- 2 tablespoons melted butter
- 2 tablespoons sugar (for garnish)
- ½ teaspoon ground cinnamon

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a mixing bowl, combine strawberries, blueberries, and raspberries with 1 tablespoon sugar, cornstarch, vanilla extract, and lemon juice. Let the mixture sit for 10 minutes to macerate.

Roll out the pastry sheet on a lightly floured surface and cut it into 8 equal squares (or circles).
