ingredients
- 4 cups fresh blueberries
- 1 cup fresh basil leaves, loosely packed
- 3 cups water
- 2 cups honey (preferably wildflower or clover)
- 1/4 teaspoon yeast nutrient
- 1 packet champagne or mead yeast
- 1/2 teaspoon acid blend (optional, for balancing)
steps
- 1.
Begin by gently mashing the blueberries in a large mixing bowl to release their juices. Set aside.
- 2.
In a medium saucepan, combine 3 cups of water and the honey. Heat over low-medium heat until the honey dissolves completely, forming a honey-water mixture.
- 3.
Once dissolved, remove from heat and let it cool to room temperature.
- 4.
In a sanitized fermentation vessel, combine the cooled honey-water mixture with the mashed blueberries and basil leaves. Stir well.
- 5.
Add yeast nutrient and the packet of champagne or mead yeast to the mixture, followed by the acid blend if using.
- 6.
Seal the fermentation vessel with an airlock and place it in a cool, dark place to ferment for about 2-4 weeks, or until bubbling slows significantly.
- 7.
Once fermentation is complete, siphon the mead into sanitized bottles, leaving sediment behind.
- 8.
Cap or cork the bottles and allow the mead to age in a cool dark place for at least 3 months to develop its flavors.
- 9.
Chill before serving, and enjoy the refreshing blend of blueberry and basil in every sip.
