Cinnamon Swirl Bagel

- 4 cups bread flour
- 2½ teaspoons instant yeast
- 2 teaspoons ground cinnamon
- 1½ teaspoons salt
- 2 tablespoons brown sugar
- 1½ cups warm water
- 3 tablespoons unsalted butter, melted
- 1/3 cup granulated sugar
- 1 tablespoon ground cinnamon

In a large mixing bowl, combine bread flour, instant yeast, ground cinnamon, salt, and brown sugar.

Gradually add warm water and melted butter to the dry ingredients. Mix until a dough forms.

Knead the dough for about 6-8 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour, or until doubled in size.

Punch down the dough and divide it into 8 equal portions. Roll each portion into a rope shape and twist into a bagel shape. Place the bagels on a lined baking sheet and let them rest for 10 minutes.

Preheat the oven to 425°F (220°C). In a small bowl, combine granulated sugar and ground cinnamon for the swirl.

Carefully press your thumb through the center of each bagel to form a hole. Stretch the hole slightly and dip the bagels into the cinnamon sugar mixture, making sure to coat the surface evenly.
