Creamy coconut pasta with a rich mushroom flavor, paired with artichoke hearts and a crunchy nut and dried fruit topping.

- 8 oz pasta
- 1 can diced tomatoes
- 1 cup dried mushrooms
- 1 cup coconut cream
- 1 cup artichoke hearts
- 1/2 cup mixed nuts and dried fruit
- 2 tbsp mixed herbs (thyme, basil, oregano)
- Salt and pepper to taste
