- 1 cup Brussels sprouts, halved
- 1 stalk celery, sliced
- 1 cup Greek yogurt
- 3 tablespoons green curry paste
- 1 cup shredded cheese (such as cheddar or mozzarella)
- 4 slices crusty bread
- Salt and pepper, to taste
steps
- 1.
Preheat the oven to 400°F (200°C).
- 2.
In a large bowl, combine the potatoes, carrots, Brussels sprouts, and celery. Season with salt and pepper.

Sprinkle the shredded cheese evenly over the vegetables.
- 7.
Return the baking dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- 8.
While the bake is finishing, toast the slices of crusty bread.
- 9.
Serve the creamy curry cheese bake hot, alongside the toasted bread. Enjoy the delightful combination of flavors!
