Creamy Goat Cheese Chicken and Rice Bake

- 4 boneless, skinless chicken breasts
- 1 cup medium-grain rice, rinsed and drained
- 2 cups chicken broth
- 1/2 cup chopped spinach
- 3/4 cup crumbled goat cheese
- 2 cloves garlic, minced
- 1/4 tsp black pepper
- 2 tbsp olive oil
- Salt, to taste
