Protein-Packed Loaded Potato Chowder
ingredients
- 4 medium russet potatoes, diced
- 6 slices of thick-cut bacon, chopped
- 1 medium onion, diced
- 4 cloves garlic, minced
- 4 cups low-sodium chicken or vegetable broth
- 2 cups milk
- 2 cups shredded sharp cheddar cheese
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup green onions, sliced (for garnish)

In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.

Add the diced onion to the pot and sauté until translucent, about 5 minutes. Then, add minced garlic and cook for another minute.

Stir in the diced potatoes and broth; bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.

Use a potato masher to lightly mash the potatoes in the soup for a thicker consistency.
