This vegan risotto recipe is creamy, comforting, and loaded with nutritious kale and mushrooms. The perfect dinner to cozy up with on a cold night.
ingredients
- 1 cup Arborio Rice
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup sliced mushrooms
- 2 cups chopped kale
- 1/4 cup nutritional yeast
- 1/4 cup vegan butter
- 1/4 cup unsweetened plant-based milk
- Salt and pepper, to taste

In a large microwave-safe bowl, add the Arborio rice, onion, garlic, and vegetable broth. Microwave on high for 10 minutes, stirring occasionally.

Add the mushrooms and microwave on high for an additional 5 minutes.

Stir in the chopped kale, nutritional yeast, vegan butter, and plant-based milk. Microwave on high for another 5 minutes or until the rice is cooked and the kale is wilted.

Season with salt and pepper to taste. Serve hot.
