Creamy Vanilla Cheesecake Bars

- 1 ½ cups graham cracker crumbs
- ⅓ cup unsalted butter, melted
- 2 tbsp granulated sugar
- 16 oz cream cheese, softened
- 1 cup sour cream
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs

Preheat the oven to 325°F (160°C) and line a 9x9 inch baking pan with parchment paper.

In a mixing bowl, combine graham cracker crumbs, melted butter, and 2 tbsp sugar. Mix until evenly combined.

Press the crumb mixture firmly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then set aside to cool.

In another mixing bowl, beat the softened cream cheese until smooth. Gradually add ¾ cup sugar and mix until fully incorporated.

Add sour cream and vanilla extract to the cream cheese mixture, blending until combined.
