ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 vanilla bean, split lengthwise
- 2 tablespoons capers, drained
- Fresh parsley, for garnish
steps
- 1.
Season the chicken breasts with salt and pepper on both sides.
- 2.
Heat the olive oil in a skillet over medium-high heat and add the chicken. Cook for 4-5 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
- 3.
In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
- 4.
Pour in the chicken broth and scrape the bottom of the skillet to deglaze. Bring to a simmer and cook for 3-4 minutes until slightly reduced.
- 5.
Reduce the heat to low and add the heavy cream. Scrape the seeds from the vanilla bean into the sauce and drop in the bean pod. Stir to combine.
- 6.
Simmer the sauce gently for 8-10 minutes until slightly thickened, stirring occasionally.
- 7.
Return the chicken breasts to the skillet along with the capers. Simmer for an additional 2-3 minutes until the chicken is heated through and the flavors are well combined.
- 8.
Remove the vanilla bean pod and discard.
- 9.
Serve the creamy vanilla chicken over rice or pasta, spooning the sauce over the top. Garnish with fresh parsley.
