- 4 sub rolls
- 1 large tomato, sliced
- 8 oz mozzarella cheese, sliced
- 1 cup marinara sauce

- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 1/2 cups panko breadcrumbs
- 1 tsp dried oregano
- Salt and pepper to taste
- Olive oil cooking spray
steps
- 1.
Preheat your air fryer to 400°F (200°C).
- 2.
Make a shallow cut down the center of each cudighi sausage to avoid splitting while cooking. Grill or pan-fry them until cooked through.
- 3.
Slice the sub rolls in half lengthwise and toast them lightly.
- 4.
Preheat a skillet and warm the marinara sauce.
- 5.
In three separate bowls, place the flour, beaten eggs, and panko breadcrumbs mixed with dried oregano.
- 6.
Dip the eggplant slices into the flour, followed by the beaten eggs, and then coat them with the seasoned breadcrumbs.
- 7.
Place the breaded eggplant slices in a single layer in the preheated air fryer. Spray them with olive oil cooking spray and cook for about 8 minutes until golden and crispy.
- 8.
Spread a generous amount of marinara sauce on the bottom halves of the sub rolls.
- 9.
Place a cudighi sausage on each sub roll and top with tomato slices, mozzarella cheese, and a layer of air-fried eggplant slivers.
- 10.
Sprinkle with salt and pepper to taste and place the top halves of the sub rolls on the sandwiches.
- 11.
Place the subs under the broiler for a few minutes until the mozzarella is melted and bubbly.
- 12.
Serve the crispy cudighi sausage subs immediately and enjoy the explosion of flavors!
