This flavorful and crunchy stir-fry features tender chicken, crispy cashew nuts, and crisp water chestnuts tossed in a savory sauce that will leave you craving more.
ingredients
- 1 lb chicken breast, sliced
- 1/2 cup cashew nuts
- 1 can water chestnuts, sliced
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp cornstarch
- Salt and pepper to taste
- Vegetable oil for cooking

In a small bowl, mix soy sauce, oyster sauce, sesame oil, and cornstarch. Set aside.

Heat oil in a wok or skillet over medium-high heat. Add chicken and stir-fry until cooked through. Remove from pan.

In the same pan, add more oil if needed. Stir-fry cashew nuts until golden brown. Remove from pan.

Stir-fry garlic, onion, and bell pepper until softened.

Add water chestnuts and cooked chicken back to the pan.

Pour the sauce mixture over the chicken and vegetables. Cook until thickened.

Stir in the cashew nuts and season with salt and pepper.

Serve hot over steamed rice.
