Crunchy Garlic Chicken Fried Rice

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 tablespoons soy sauce

- 2 tablespoons sesame oil
- 4 cloves garlic, minced

- 2 tablespoons vegetable oil
- 3 cups cooked jasmine rice, chilled (1 cup uncooked)
- 1 cup carrot, diced
- 1 cup frozen peas
- 1 cup red bell pepper, diced
- 2 green onions, sliced
- 2 eggs, beaten
- Salt and pepper to taste

In a bowl, combine the chicken, soy sauce, oyster sauce, garlic, ginger, and a pinch of salt and pepper. Mix well and let marinate for 15 minutes.
