Enchanted Forest Mead

ingredients
- 2.5 lbs forest honey
- 3.5 quarts spring water
- 1.5 cups mixed wild botanicals (such as lavender, chamomile, and thyme)
- 1.5 tsp yeast nutrient
- 1 packet mead yeast (e.g., Lalvin D-47)
- 2 oz raisins (for additional yeast nutrients)
- 1 tsp cinnamon (optional)

In a large pot, warm 1 quart of the spring water over medium heat.

Stir in the forest honey until fully dissolved, creating a honey-water mixture.

Once dissolved, remove from heat and add the remaining spring water to cool it down.

In a separate bowl, steep the wild botanicals in 2 cups of boiling water for about 15 minutes. Strain and add the infused water to the honey mixture.

Add yeast nutrient, raisins, and optional cinnamon, stirring well to combine.

Allow the mixture to cool to around 70°F (21°C) before adding the mead yeast.

Transfer the mixture to a sanitized fermentation vessel and seal with an airlock.

Let it ferment in a dark, cool space for 4-6 weeks, or until fermentation activity ceases.

After primary fermentation, siphon the mead into a sanitized carboy, leaving sediment behind.

Age the mead for an additional 3-6 months, tasting periodically until it reaches your desired flavor profile.

Bottle the mead and enjoy it chilled or at room temperature.
