Fig & Pomegranate Melomel

- 2 lbs fresh figs, chopped
- 1 lb pomegranate seeds (about 2-3 large pomegranates)
- 3 lbs honey (wildflower or clover)
- 1 gallon water (filtered or spring)
- 1 packet yeast (champagne or mead yeast)
- 1 tsp yeast nutrient
- 1/2 tsp acid blend

In a large pot, bring 1 gallon of water to a gentle boil, then remove from heat.

Dissolve the honey into the hot water, stirring until fully incorporated.

Let the honey-water mixture cool to room temperature before adding yeast nutrient and acid blend.

In a separate bowl, mash the chopped figs and pomegranate seeds to release their juices.

Gently stir the mashed fruit into the cooled honey-water mixture.

Sprinkle the yeast on top of the mixture without stirring. Cover the pot with a clean cloth and let it sit for 24 hours.

After 24 hours, stir the mixture vigorously to aerate and incorporate the yeast.

Transfer the melomel into a sanitized fermentation vessel, leaving behind any pulp.

Seal the vessel with an airlock and place it in a dark, cool area (around 65-75°F) for fermentation, which should last about 4-6 weeks.

Once fermentation is complete, siphon the melomel into bottles, leaving sediment behind. Seal and age for at least 3 months for optimal flavors.
