ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 32 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup frozen blueberries
- 1/4 cup lemon juice
- 1/4 cup cornstarch
- 1/2 cup cold water
- Blue food coloring (optional)
- Whipped cream and fresh blueberries for garnish
steps
- 1.
Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased 9-inch springform pan to form the crust. Bake for 10 minutes, then set aside to cool.
- 2.
In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth and creamy. Add eggs one at a time, beating well after each addition. Pour the mixture onto the cooled crust and smooth the top.
- 3.
In a saucepan, combine frozen blueberries, lemon juice, cornstarch, and water. Cook over medium heat until the blueberries burst and the mixture thickens. Remove from heat and let it cool slightly. Optional: Add a few drops of blue food coloring for a brighter shade of blue.
- 4.
Pour the blueberry sauce over the cream cheese mixture and use a knife to gently swirl it to create a marbled effect. Bake for 55-60 minutes or until the center is set.
- 5.
Turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for 1 hour. Then, transfer it to a wire rack to cool completely. Refrigerate for at least 4 hours or overnight.
- 6.
Once chilled, remove the sides of the springform pan. Serve the Frozen Blueberry Bliss Cheesecake chilled, garnished with whipped cream and fresh blueberries.
