Wholesome Fruity Muffins

- 1 cup whole wheat flour
- 1 cup rolled oats
- 2 ripe bananas, mashed
- 1 cup unsweetened applesauce
- 1/2 cup grated carrots
- 1/2 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup mixed berries (fresh or frozen)
- 1/4 cup almond milk (or any plant-based milk)

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

In a large bowl, combine whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and nutmeg. Mix well.

In another bowl, mix the mashed bananas, applesauce, almond milk, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix!

Gently fold in the grated carrots and mixed berries, ensuring they are evenly distributed.

Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
