Tangy lime and aromatic garlic combine with fluffy rice, while red pepper adds a hint of spice. Fresh cilantro adds a burst of herbaceous flavor, creating a vibrant and satisfying side dish.
ingredients
- 1 cup long grain white rice
- 2 cups water
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon lime zest
- 2 tablespoons lime juice
- 1 red pepper, diced
- 2 tablespoons chopped fresh cilantro
- Salt, to taste
steps
- 1.
Rinse the rice under cold water until the water runs clear, then drain well.
- 2.
In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- 3.
Add the rinsed rice to the saucepan and stir until evenly coated with butter and garlic mixture.
- 4.
Add water and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed.
- 5.
In a separate pan, melt the remaining tablespoon of butter over medium heat. Add diced red pepper and sauté until slightly softened, about 3-4 minutes.
- 6.
Once the rice is cooked, remove from heat and fluff it with a fork. Stir in lime zest, lime juice, sautéed red pepper, and chopped cilantro. Season with salt to taste.
- 7.
Serve the garlicky lime rice warm as a flavorful side dish to complement your main course.
