Golden Sweet Corn Wine

- 12 cobs sweet corn
- 4 cups corn syrup
- 2 oranges, juice only
- 1 teabag
- 1 tsp yeast energizer
- 1 campden tablet
- 1 packet wine yeast
- Water to 1 gallon

Begin by shucking the sweet corn and cutting the kernels off the cobs.

In a large pot, add the corn kernels and cover them with water. Bring to a boil and then simmer for 30 minutes.

After simmering, strain the mixture to obtain the corn liquid (this is your wort). Discard the solid corn.

In the large pot, combine the strained corn liquid, corn syrup, and orange juice. Stir well until the syrup is fully dissolved.

Allow the mixture to cool down to room temperature.

Once cooled, add the crushed campden tablet to the mixture to sanitize it.

Steep the teabag in the mixture for around 10 minutes, then remove the bag.

Add the yeast energizer and sprinkle the packet of wine yeast on top, allowing it to rehydrate for about 15 minutes before stirring it in.

Fill the remaining space with water to bring the total volume to 1 gallon.
- 10.
Transfer the mixture to a sanitized fermentation vessel and fit an airlock.
- 11.
Allow the wine to ferment in a cool, dark place for about 2-3 weeks or until the fermentation has slowed, indicated by the bubbles in the airlock.

Once fermentation is complete, siphon the wine into clean bottles and cork them.

Age the wine for at least another month to cultivate the flavors before enjoying your homemade maize wine!
