Zesty Chickpea Nacho Bake
ingredients
- 2 cups cooked chickpeas
- 1 bag of tortilla chips
- 1 cup plain yogurt
- 2 tablespoons tahini
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Almonds, chopped (for garnish)

Preheat your oven to 350°F.

Spread a layer of tortilla chips on a baking sheet and toast in the oven for 5 minutes, or until crispy.

In a small bowl, whisk together the yogurt, tahini, minced garlic, olive oil, lemon juice, cumin, coriander, paprika, turmeric, and salt to make the tahini sauce.

In a serving dish, spread a layer of crispy tortilla chips. Top with a layer of cooked chickpeas, then generously drizzle with the tahini sauce.

Repeat the previous step, creating additional layers until all ingredients are used, finishing with a layer of the tahini sauce.

Garnish with chopped parsley and almonds.
- 7.
