Colorful bell peppers filled with flavorful beef and quinoa mixture, baked to perfection.
ingredients
- 4 large bell peppers
- 1 lb ground beef
- 1 cup cooked quinoa
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper, to taste
- 1 cup shredded cheese

Preheat oven to 375°F.
- 2.
Cut tops off peppers, remove seeds and membranes.
- 3.
In a skillet, cook beef, onion, and garlic until browned.
- 4.
Add cooked quinoa, diced tomatoes, cumin, chili powder, salt, and pepper to the skillet. Stir well.
- 5.
Stuff peppers with beef and quinoa mixture, place in a baking dish.
- 6.
Cover with foil and bake for 30 minutes.
- 7.
Remove foil, sprinkle with cheese, and bake for additional 10 minutes.
