Savory Turkey Vegetable Stew
ingredients
- 2 lbs turkey breast, diced
- 1 cup celery, chopped
- 1 cup carrots, sliced
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) cut green beans, drained
- 4 cloves garlic, minced
- 1 medium onion, diced
- 2 large potatoes, cubed
- 2 tsp salt
- 1/2 tsp pepper
- 2 tsp Italian seasonings
- 4 cups chicken broth
- 2 bay leaves
- 1 yellow bell pepper, diced
- 2 tbsp all-purpose flour

In a large pot, heat a bit of oil over medium heat and sauté the onions and garlic until translucent.

Add the diced turkey breast to the pot and cook until browned and no longer pink.

Stir in the celery, carrots, yellow bell pepper, corn, and green beans. Cook for about 5 minutes until the vegetables start to soften.

In a separate bowl, whisk together the flour, chicken broth, salt, pepper, and Italian seasonings until smooth.

Pour the broth mixture over the turkey and vegetables, stirring to combine.

Add the bay leaves and cubed potatoes, mixing well.

Bring the stew to a boil, then reduce the heat and let it simmer for 30-35 minutes until the vegetables are tender and the flavors meld together.

Remove the bay leaves before serving.
