Herb-Crusted Chicken with Lemon Asparagus

- 1 boneless, skinless chicken breast (6-8 oz)
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 lemon, zested and juiced
- 1 cup asparagus, trimmed
- 1 tablespoon grated Parmesan cheese (optional)

Preheat your oven to 400°F (200°C).

In a small bowl, mix olive oil, oregano, garlic powder, salt, pepper, lemon zest, and half of the lemon juice to create a marinade.

Place the chicken breast in a shallow dish and pour the marinade over it, ensuring it’s well-coated. Allow it to marinate for 10 minutes.

While the chicken marinates, prepare the asparagus. Toss it with the remaining lemon juice, a drizzle of olive oil, and a pinch of salt and pepper.
