- 2 garlic cloves, minced
- 1-inch piece ginger, grated
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1 cup coconut milk
- Fresh cilantro, for garnish
steps
- 1.
In a large skillet, heat the vegetable oil over medium-high heat.
- 2.
Add the chopped onion and sauté until golden brown, around 5 minutes.
- 3.
Stir in the minced garlic and grated ginger, and cook for an additional minute.
- 4.
Add the diced chicken to the skillet and cook until lightly browned, approximately 6-8 minutes.

In a separate bowl, mash one of the mangoes using a fork until smooth.
- 6.
Add the mashed mango, turmeric, cumin, coriander, chili powder, and salt to the skillet. Stir well to combine.
- 7.
Pour in the coconut milk and bring the mixture to a simmer. Reduce the heat and let it cook for 10-15 minutes, allowing the flavors to meld together.
- 8.
While the chicken is cooking, dice the second mango into small chunks and set aside.
- 9.
Once the chicken is cooked through and the sauce has thickened, add the diced mango chunks to the skillet.
- 10.
Gently stir to incorporate the mango chunks and simmer for an additional 3-4 minutes.
- 11.
Remove from heat and garnish with fresh cilantro.
- 12.
Serve the Mango Chicken hot with steamed rice or naan bread.
