Satisfying vegan burrito filled with flavorful Mexican white rice, beans, veggies, and avocado, wrapped in a warm tortilla.
ingredients
- 1 cup white rice
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can black beans, drained and rinsed
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 4 large tortillas
- 1 avocado, sliced

In a pot, heat olive oil and sauté onion, garlic, and bell pepper until softened.
