- 2 lbs nectarines, chopped and pitted
- 4-2 cups granulated sugar (adjust to taste)
- 1 tsp yeast nutrients
- 1/2 tsp pectic enzyme
- 1/4 tsp tannin
- 1 campden tablet (crushed)
- 1 gallon carboy
- 1 packet wine yeast

Start by sanitizing the carboy and any equipment to prevent contamination.

In a large pot, heat 1 quart of water and dissolve 2 cups of granulated sugar into it to create a simple syrup.

While the syrup is cooling, combine the chopped nectarines with the remaining water in a fermentation vessel.

Add the yeast nutrients, pectic enzyme, tannin, and crushed campden tablet to the nectarines.

Pour the cooled syrup into the fermentation vessel and stir thoroughly to mix the ingredients.

Cover the vessel with a clean cloth and let it sit for 24 hours to allow the campden tablet to work.

After 24 hours, sprinkle the wine yeast over the mixture without stirring.

Secure the carboy with an airlock and place it in a dark, cool area to ferment for about 4-6 weeks.
