ingredients
- 1 whole chicken (about 4 pounds), cut into pieces
- 2 onions, sliced
- 2 bell peppers (any color), sliced
- 2 cups long-grain rice
- 4 cups chicken broth
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh cilantro, for garnish
- Lime wedges, for serving
steps
- 1.
In a large pot, heat olive oil over medium heat. Add onions, bell peppers, and garlic. Sauté until softened and lightly browned.
- 2.
Push the vegetables to one side and add chicken pieces to the pot. Brown the chicken on all sides, about 5 minutes per side.
- 3.
Sprinkle smoked paprika, cumin, salt, and black pepper over the chicken and vegetables. Stir to coat evenly.
- 4.
Add rice to the pot and stir well to combine with the chicken and vegetables.
- 5.
Pour chicken broth into the pot and bring to a boil. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and the chicken is cooked through.
- 6.
Remove from heat and let it rest, covered, for 5 minutes to allow the flavors to meld.
- 7.
Serve the One-Pot Fiesta Chicken garnished with fresh cilantro and lime wedges on the side.
