- 6 lb Star Thistle honey
- 1 oz yeast nutrient
- Water (to top off)
- 10 lbs peaches (pitted and diced)
- Sweet mead yeast (low-flocculation)
- 1 tbsp pectic enzyme
- 1 cup priming sugar (for carbonation)

Sanitize your fermentation vessel and any equipment thoroughly.

In a large pot, bring water to a boil, then remove from heat. Mix in Star Thistle honey until completely dissolved. Allow to cool to room temperature.

Meanwhile, prepare peaches by pitting and dicing them into small chunks.

Add the diced peaches to the sanitized fermentation vessel.

Pour the cooled honey-water mixture over the peaches, ensuring they are well submerged.

Dissolve the priming sugar in a cup of boiling water and let cool, then gently mix it into the mead.
