- 5 lbs ripe red tomatoes, crushed
- 4 cups granulated sugar
- 1 tsp yeast nutrient
- Juice of 2 lemons
- 2 Campden tablets, crushed
- ½ tsp pectic enzyme
- 1 packet wine yeast
- Water, as needed

Start by thoroughly washing the ripe tomatoes.

Crush the tomatoes in a large, sanitized primary fermenter.

Dissolve the granulated sugar in a small amount of hot water and pour it over the crushed tomatoes.

Add the yeast nutrient, lemon juice, crushed Campden tablets, and pectic enzyme to the mixture.

Stir well to combine all the ingredients, ensuring the sugar is fully dissolved.

Add enough water until the total volume reaches 1 gallon.

Stir the mixture again and cover it loosely with a clean cloth to allow it to breathe.

Let it sit for 24 hours to allow the Campden tablets to work.

After 24 hours, sprinkle the wine yeast over the mixture without stirring.

Cover the fermenter again, this time with an airlock, and let it ferment in a cool, dark place for 1-2 weeks.

Once fermentation slows (bubbles in airlock decrease), siphon the wine into a secondary fermenter, leaving sediment behind.
