- 2 medium acorn squashes, halved and seeded
- 1 lb chicken breast, diced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 cup cooked quinoa (optional for extra texture)
- ½ cup chopped fresh parsley, for garnish

In a bowl, mix the olive oil, thyme, garlic powder, paprika, salt, and pepper. Add the diced chicken and toss to coat evenly.
