- 1-2 Scotch bonnet peppers, diced (adjust for spice)
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon baking powder
- 1/4 cup water (as needed)
- Vegetable oil (for frying)

Soak the black-eyed peas in water for at least 6 hours or overnight.
