ingredients
- 1 teaspoon vegetable oil
- 2 medium onions, sliced
- 8 slices New York Deli-Style rye bread
- 2 tablespoons Dijon mustard
- 2 cups shredded cheddar cheese
- 1 large tomato, seeded and coarsely chopped (about 1 cup)
- 1-1/2 cups cream or whole milk
- 4 large eggs
steps
- 1.
Heat oven to 300°F. Spray an 8x8x2-inch baking dish with cooking spray.
- 2.
In a large skillet, heat the vegetable oil over medium-high heat. Add sliced onions and cook for about 8 minutes, stirring frequently, until they turn golden brown. Remove from heat.
- 3.
Trim the crusts off the rye bread and spread Dijon mustard on one side of each slice.
- 4.
Arrange 4 slices of bread, mustard side up, in the prepared baking dish.
- 5.
Layer 1 cup of shredded cheddar cheese, coarsely chopped tomato, and the grilled onions on top of the bread.
- 6.
Place the remaining bread slices on top, mustard side down, over the onion layer.
- 7.
In a bowl, beat together the cream or milk and eggs until well blended. Pour this mixture evenly over the layered bread.
- 8.
Bake uncovered for about 1 hour or until the center is set and the bread is golden brown.
- 9.
Sprinkle with the remaining cheese and let stand for 10 minutes before cutting.
