Grilled Chicken and Vibrant Veggies

- 4 boneless, skinless chicken breasts (6 oz each)
- 1 tablespoon olive oil
- 2 teaspoons garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 bell pepper (any color), sliced
- 1 medium zucchini, sliced
- 2 medium carrots, sliced
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish (optional)

In a small bowl, combine olive oil, garlic powder, smoked paprika, salt, and black pepper to create a marinade.

Place chicken breasts in a resealable plastic bag or dish, and pour marinade over them. Seal and refrigerate for at least 30 minutes (up to overnight for deeper flavor).

Preheat a grill pan or skillet over medium-high heat.

Remove chicken from marinade and cook for about 6-7 minutes on each side or until internal temperature reaches 165°F.

While the chicken is cooking, add sliced vegetables to the same pan, seasoning with Italian seasoning. Cook for about 5-7 minutes until tender and slightly charred.

Once cooked, let chicken rest for a few minutes before slicing.
