Silky Chocolate Mousse with a Greek Twist

- 4 oz dark chocolate, chopped
- 1/4 cup erythritol
- 1 tsp powdered gelatin
- 1/4 cup water
- 1 cup Greek yogurt
- 1/2 cup cottage cheese
- 1 tsp vanilla extract

In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method). Once melted, remove from heat and set aside to cool slightly.
