- ½ teaspoon salt
- ¼ cup unsalted butter, cold and cubed
- ½ cup grated smoked trout fillets
- ½ cup grated apple, excess liquid squeezed out
- ⅓ cup shredded sharp cheddar cheese
- ½ cup buttermilk
- 1 tablespoon maple syrup
- 2 tablespoons chopped fresh chives
steps
- 1.
Preheat the oven to 400°F and line a baking sheet with parchment paper.
- 2.
In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, and salt.
- 3.
Add the cold butter to the flour mixture and use a pastry cutter or your fingertips to incorporate the butter until the mixture resembles coarse crumbs.

Stir in the grated smoked trout, grated apple, and shredded cheddar cheese until well combined.
- 5.
In a separate bowl, mix together the buttermilk, maple syrup, and chopped fresh chives. Pour the buttermilk mixture into the flour mixture and gently stir until just combined.
- 6.
Turn the dough out onto a lightly floured surface and knead it gently for a minute until it holds together.
- 7.
Pat the dough into a ¾-inch thick circle and cut it into 8 wedges.
- 8.
Place the scones onto the prepared baking sheet and bake for 18-20 minutes, or until golden brown.
- 9.
Allow the scones to cool slightly before serving. Enjoy!
