Spicy Masala Poha

- 1 cup flattened rice (poha)
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 small onion, finely chopped
- 1 green chili, finely chopped
- ½ teaspoon turmeric powder
- ½ teaspoon red chili powder
- ½ teaspoon salt (adjust to taste)
- ¼ cup roasted peanuts
- ¼ cup fresh cilantro leaves, chopped
- 1 tablespoon lemon juice
- Lemon wedges, for garnish

Rinse the flattened rice in cold water, drain, and set aside for 5 minutes.

Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, and let them splutter.

Add onions and green chili, sauté until onions turn translucent.

Reduce heat to low. Add turmeric powder, red chili powder, and salt. Mix well.

Add flattened rice and mix gently until the spices evenly coat the rice.

Add roasted peanuts and fresh cilantro leaves, mix well.

Remove from heat and drizzle with lemon juice. Mix gently.
