Spicy Thai Chicken with Sesame Broccoli and Cauliflower Rice

- 2 boneless, skinless chicken breasts
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon fish sauce
- 1 teaspoon sriracha sauce
- 1 garlic clove, minced
- 1 teaspoon grated ginger
- 1 teaspoon vegetable oil
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
- Salt and pepper to taste

Preheat the sous vide water bath to 145°F (63°C).

In a small bowl, mix soy sauce, honey, fish sauce, sriracha sauce, garlic, ginger, and vegetable oil. Place the chicken breasts in a sous vide bag and pour the marinade over them. Seal the bag and cook in the water bath for 1 hour.

While the chicken cooks, steam the broccoli and cauliflower until tender. Set aside.

Once the chicken is ready, remove it from the bag and pat dry. Heat a skillet over medium-high heat and sear the chicken on both sides until golden brown.

In the same skillet, add sesame oil and briefly sauté the steamed broccoli and cauliflower rice. Season with salt and pepper and sprinkle sesame seeds on top.

Divide the cauliflower rice onto plates and place the seared chicken on top. Serve alongside the sesame broccoli.
