ingredients
- 4 chicken breasts, boneless and skinless
- 1 cup mozzarella cheese, shredded
- 2 Panopean peppers, roasted and chopped
- 1 cup fresh spinach, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- ½ cup marinara sauce
- Fresh basil, for garnish
steps
- 1.
Preheat your oven to 375°F (190°C).
- 2.
In a bowl, mix the mozzarella cheese, chopped Panopean peppers, spinach, garlic, oregano, salt, and pepper until well combined.
- 3.
Carefully slice a pocket into each chicken breast without cutting all the way through.
- 4.
Stuff each chicken breast with the cheese and pepper mixture, securing with toothpicks if necessary.
- 5.
In a large oven-safe skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts and sear for 4-5 minutes on each side until golden brown.
- 6.
Pour marinara sauce over the chicken and transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature of 165°F).
- 7.
Remove from the oven and let rest for a few minutes. Remove toothpicks, if used, and garnish with fresh basil before serving.
