Sweet and Spicy Pepper Jelly Graham Crackers

- 1 cup red bell peppers, finely chopped

- 1 ½ cups granulated sugar
- ½ cup apple cider vinegar
- 1 tablespoon lemon juice

- 1 teaspoon red pepper flakes
- 1 pouch (2 ½ teaspoons) powdered fruit pectin

Place a graham cracker on a baking sheet and spoon about 1 tablespoon of the pepper jelly onto the center of each cracker. Spread it evenly, leaving a small border around the edges.
