- 3 lbs raw honey
- 1.5 quarts water
- 1 cup passion fruit puree (fresh or frozen)
- 2 oz fresh ginger, grated
- 1 tsp yeast nutrient
- 1 packet champagne yeast
- 1/4 tsp potassium metabisulfite (optional, for stabilization)
- 1 tsp fining agent (optional, for clarity)

In a large pot, bring 1 quart of water to a boil, then gradually add the honey, stirring until fully dissolved.

Remove from heat and add the remaining water to cool the mixture (must).

Once cooled to room temperature, stir in the grated ginger and passion fruit puree.

Add the yeast nutrient and champagne yeast, stirring gently to combine.

Transfer the mixture to a sanitized fermentation vessel, leaving about an inch of space at the top.

Seal the vessel with an airlock and ferment at room temperature for about 2-4 weeks, or until bubbling ceases.

After fermentation, siphon the melomel into a clean container, leaving sediment behind. If desired, add potassium metabisulfite and fining agent.
