- 1,250 g ripe pineapples, diced
- 10 cloves minced garlic
- 750 g brown sugar
- 15 g red chili flakes
- 600 ml apple cider vinegar
- 300 g pimento peppers, chopped
- 400 g raisins
- 25 g ground cumin
- 5 g ground cardamom
- 10 g ground coriander
- 25 g garam masala
- 5 g turmeric powder
- 75 g fresh ginger, grated
- 5 g salt
- 6 g cayenne pepper

In a large saucepan, combine diced pineapples, minced garlic, and brown sugar.

Pour in the apple cider vinegar and mix well.

Add red chili flakes, chopped pimento peppers, raisins, ground cumin, ground cardamom, ground coriander, garam masala, turmeric, grated ginger, and salt to the saucepan.

Sauté over medium heat until fragrant, stirring occasionally, about 2-3 minutes.

Bring the mixture to a boil, then reduce heat to low and let it simmer for 30-40 minutes until thickened, stirring frequently.
