Turkey Meatball and Veggie Pasta

A delicious and wholesome meal prep option featuring lean turkey meatballs, whole wheat pasta, and a variety of nutritious vegetables in a flavorful sauce.

- 1 lb lean ground turkey
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 8 oz whole wheat spaghetti
- 1 tbsp olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 can (15 oz) tomato sauce
- Fresh basil, for garnish

Preheat oven to 400°F. Line a baking sheet with parchment paper.

In a bowl, mix ground turkey, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Form into meatballs and place on the baking sheet.

Bake meatballs for 20-25 minutes or until cooked through.

Cook spaghetti according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add onion, bell pepper, and zucchini. Cook until vegetables are tender.
