- 1 cup vital wheat gluten
- 1/4 cup nutritional yeast
- 1/4 cup blackstrap molasses
- 1/4 cup soy sauce
- 1/4 cup tomato paste
- 2 tablespoons olive oil
- 1 cup cooked brown rice
- 1/2 cup cooked quinoa
- 1/2 cup cooked black beans
- 1/2 cup finely chopped mushrooms
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon fennel seeds
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cinnamon
- Salt and pepper, to taste
steps
- 1.
In a large mixing bowl, combine vital wheat gluten, nutritional yeast, molasses, soy sauce, tomato paste, and olive oil. Mix well until a dough-like consistency forms.
- 2.
In a food processor, pulse brown rice, quinoa, and black beans until coarsely ground. Add this mixture to the mixing bowl.
- 3.
Sauté mushrooms, onion, and garlic in a pan until softened. Add them to the mixing bowl along with smoked paprika, thyme, fennel seeds, cloves, allspice, cinnamon, salt, and pepper. Stir until well combined.
- 4.
Divide the mixture into four portions and shape each into a sausage-like log. Wrap each log tightly in aluminum foil, twisting the ends to secure.
- 5.
Place the wrapped sausages in a steamer basket and cook over medium heat for 45 minutes.
- 6.
Once cooked, remove the sausages from the steamer basket and let them cool slightly. Unwrap the aluminum foil and gently slice each sausage into thick rounds.
- 7.
To serve, pan-fry the sausage slices until golden brown on each side. Enjoy hot with your favorite vegan-friendly sides!
