ingredients
- 1 ½ cups all-purpose flour
- ½ cup powdered sugar
- ¾ cup unsalted butter, cold and cubed
- 4 large eggs
- 1 ½ cups granulated sugar
- Zest of 2 lemons
- ½ cup freshly squeezed lemon juice
- ¼ cup all-purpose flour
- ¼ teaspoon baking powder
- Powdered sugar, for dusting
steps
- 1.
Preheat the oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper.
- 2.
In a food processor, combine the flour, powdered sugar, and cold butter. Pulse until the mixture resembles coarse crumbs. Press the crust mixture evenly into the bottom of the prepared baking dish.
- 3.
Bake the crust for 20 minutes or until lightly golden.
- 4.
Meanwhile, in a mixing bowl, whisk together the eggs, granulated sugar, lemon zest, lemon juice, flour, and baking powder until well combined.
- 5.
Pour the lemon filling over the warm crust and return to the oven. Bake for an additional 20 minutes until the filling is set and lightly golden on top.
- 6.
Remove from the oven and let the bars cool completely in the baking dish.
- 7.
Once cooled, refrigerate for at least 2 hours to allow the bars to firm up.
- 8.
Dust the bars with powdered sugar and cut into squares before serving.
