Seafood Stir-Fry with Crunchy Water Chestnuts

ingredients
- 1 lb mixed seafood (shrimp, scallops, and squid rings)
- 2 cups mixed vegetables (snow peas, bell peppers, baby corn)
- 1 can (8 oz) water chestnuts, drained and sliced
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 3 tbsp vegetable oil
- 2 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tsp brown sugar
- 1 tsp sesame oil
- 1/2 tsp white pepper
- 2 green onions, sliced

Preheat your long-handled wok over high heat until it begins to smoke slightly.

Add 2 tablespoons of vegetable oil and swirl to coat the wok's surface.

Add minced garlic and ginger, stirring constantly for about 30 seconds until fragrant.

Add mixed vegetables and water chestnuts to the wok. Stir-fry for 2-3 minutes, tossing frequently.

Push the vegetables and water chestnuts to the sides, creating a well in the center. Add the remaining tablespoon of oil to this well.

Add the mixed seafood to the center of the wok. Allow it to sear for about 1 minute without stirring.

Begin to stir-fry the seafood, mixing it with the vegetables and water chestnuts. Cook for 2-3 minutes until the seafood is nearly cooked through.

Add oyster sauce, fish sauce, brown sugar, sesame oil, and white pepper to the wok.
