Savory Allspice Stew with Caramelized Onions

- 1.5 lbs Impossible Beef, ground
- 2 tablespoons all-purpose flour
- 2 teaspoons allspice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons olive oil
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 2 cups vegetable broth
- 1 cup diced tomatoes
- 2 tablespoons Worcestershire sauce (vegetarian-friendly)
- 2 bay leaves
- 3 cups cubed potatoes
- 2 cups sliced carrots
- Fresh parsley for garnish

In a large bowl, combine flour, allspice, salt, and black pepper. Coat the ground Impossible Beef in the flour mixture.

Heat olive oil in a Dutch oven or large pot over medium-high heat. Brown the Impossible Beef, stirring to break it into crumbles. Set aside.

In the same pot, add the sliced onions and garlic. Sauté until the onions turn golden brown and caramelized, about 10-12 minutes.

Return the browned Impossible Beef to the pot with the caramelized onions. Stir in vegetable broth, diced tomatoes, vegetarian-friendly Worcestershire sauce, and bay leaves. Bring to a boil, then reduce the heat to low, cover, and simmer for 1 hour.

After 1 hour, add the cubed potatoes and sliced carrots to the pot. Cover and continue simmering for an additional 30-40 minutes, or until the Impossible Beef is tender and the vegetables are cooked through.

Remove the bay leaves, adjust seasoning if needed, and garnish with fresh parsley.
