Fluffy Almond Flour Pancakes
ingredients
- 1 cup almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1/2 cup unsweetened almond milk
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
- Coconut oil for cooking

In a mixing bowl, combine almond flour, baking powder, and salt.

In another bowl, whisk together eggs, almond milk, honey, and vanilla extract until smooth.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Heat a non-stick skillet over medium heat and add a little coconut oil.

Pour about 1/4 cup of the pancake batter onto the skillet for each pancake.
- 6.
Cook for 2-3 minutes, or until bubbles form on the surface, then flip and cook for another 2 minutes.
- 7.
Repeat with the remaining batter, adding more oil to the skillet as needed.
- 8.
Serve warm with your favorite toppings such as fresh fruit, yogurt, or syrup.
