ingredients
- 3 lbs apricots, pitted and halved
- 4 lbs honey
- 1 gallon water
- 1 packet champagne yeast
- 1 tsp yeast nutrient
- 1 tsp pectic enzyme
steps

In a large pot, combine water and honey. Heat until honey is dissolved.

Add apricots, yeast nutrient, and pectic enzyme. Let cool to room temperature.
- 3.
Transfer mixture to a sanitized fermenting vessel. Add yeast.
- 4.
Ferment for 2-3 weeks, then transfer to secondary fermentation for 2-3 months.
- 5.
Bottle and age for at least 6 months before enjoying.
