Strawberry Apricot Fusion Cheesecake
ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted vegan butter
- 16 oz vegan cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/4 cup coconut cream
- 1/4 cup apricot jam
- 1 can apricot halves, drained
- 1 cup fresh strawberries, sliced

Preheat oven to 350°F.

Mix graham cracker crumbs and melted butter, press into a pan.

Beat cream cheese, sugar, vanilla, and coconut cream until smooth.

Pour on top of crust and bake for 35 minutes.

Cool, then chill for 2 hours.

Blend apricot jam and strawberry slices until smooth, spread over cheesecake.

Top with apricot halves and fresh strawberry slices before serving.
