ingredients
- 1 medium head of cauliflower, riced
- 1 can of baked beans (16 oz)
- 1 avocado, diced
- 1 cup of sliced mushrooms
- 1/4 of a small red onion, finely chopped
- 1 tbsp of olive oil
- Salt and pepper, to taste
steps

Preheat your oven to 400°F.

Spread the riced cauliflower on a baking sheet, season with 1 tbsp of olive oil, salt, and pepper, and bake for 15 minutes, stirring occasionally.

In a pan, sauté the mushrooms with a bit of olive oil, salt, and pepper until browned.

In another pan, heat the baked beans until hot.
